You are paying for a pre-cut quarter. This option has the short-loins cut into tenderloins and New York Strip-loins.
There will be about 30 - 40 lbs of ground and the remainder as cuts (steaks, ribs, shanks, etc).
Price is based on the weight of the carcass after the meat has been dried aged for about 21 days and is $9.50/lb. Final price is around $1200-$1300 depending on carcass weight.
Price is calculated when beef is DELIVERED, not when Beef is order!
